Select the right baking pan

Have in mind that a pan can be two thirds full and not more. Glass and dark pans are the ones that absorb heat, while shiny pans deflect the heat away. If the size pan is actually oversized, your baked product may be burnt, too thin, or dried out if you haven’t adjusted the baking time right. If you choose too small pan, the baked product will start to overflow in the oven.

Pans with round shapes can provide a more even browning than square corners pans. If the cake is baked in a thick metal pan it will not brown as much as if it is baked in a thinner pan. When you have only a single baking pan in your oven, you should put it in the oven center. If you place the pan low in the oven, it will be cooked more on the bottom, because the heat is applied higher from the bottom. If you place the pan high in the oven, it will be cooked more on the top, because the heat is applied higher from the top and the cake can even become too brown. When you place more baking pans in the oven, make sure to leave two inches between.
